Bacon Biscuits

Makes 16 Biscuits

Ingredients:

  • 1 1⁄2 cups all purpose flour 1 tbsp baking powder
  • 2 eggs
  • 1 cup low fat milk
  • 1/8 cup canola oil
  • 4 pieces of bacon
  • 1 tbsp bacon dripping

Instructions:

  1. Preheat the oven for 10 minutes.
  2. Cook the bacon until crispy or all of the fat has been cooked off. Keep 1 tbsp of drippings.
  3. In a large bowl, whisk together the flour and baking powder.
  4. In a medium bowl, whisk the eggs, milk and oil together.
  5. Crumble the bacon and stir into the egg mixture.
  6. Pour the bacon mixture into the dry ingredients.
  7. Stir until combined.
  8. From the biscuits.
  9. Bake for 15 minutes.
  10. Remove the biscuits and let cool completely on a wire rack.
